Wiring Amp w/ out subs?

You should be fine, however if those are brand new subs I would make sure to properly break them in before you turn them up. I recommend turning the b down and letting them play at a low volume and turning them up over a period of 15-30 mins. If you don't do this you might "freeze" one of your subs. Oh, and about the Amp, you can leave it free floating if you really want.
